Ghee Rice - Nei Choru



Ingredients

  • Basmati rice ( 1 glass )
  • Ghee ( 1 table spoon )
  • Onion ( 1 sliced )
  • Cinamon ( 1 stick )
  • Cloves ( 3 nos )
  • Pepper ( 6 nos )
  • Cardamom ( 2 nos )
  • Cashew nuts ( 8 nos )
  • Raisins ( 8 nos )
  • Carrot ( 1/2 chopped )
  • Salt ( as required )
  • Ginger garlic paste
  • Hot Water ( 2 glass )
  • Turmeric Powder ( 1 pinch )

Process

Wash and clean the rice.

Soak it for 10 minutes before draining.

Heat ghee in a large pan and fry onions, raisins and cashew nuts until they turn brown.

Keep it aside.

Add cinnamon, cloves, cardamom and pepper in to pan.

Fry it for 30 seconds.

Drain water content from soaked rice.

Put rice and ginger garlic paste in to pan and fry it for few minutes.

Add 2 glass of hot water and salt in to pan and add lemon juice.

Add carrot and pinch of turmeric powder.

Allow them to deep boiling and then cover and lower heat to a simmer.

Cook for 10 minutes from medium flame to low flame and make sure that entire water content is absorbed.

Turn off the flame and keep it covered for another 10 minutes.

Open  the pan and fluff rice gently.

Garnish it with fried onions, raisins and cashew nuts.
