Chicken Cutlet



Ingredients

  • Chicken ( 200 gm )
  • Onion ( 2 nos, chopped )
  • Garlic ( 4 cloves, chopped )
  • Ginger ( 2 inch, chopped )
  • Chilly ( 1, chopped )
  • Bread crumps ( 1 cup )
  • Egg white ( 2 eggs )
  • Curry leaves
  • Potato ( 1 big boiled )
  • Turmeric powder ( 1 tea spoon )
  • Pepper powder ( 1 tea spoon )
  • Garam masala ( 1 tea spoon )
  • Salt ( as required )
  • Oil ( 1 cup )

Process

Boil chicken pieces with salt and turmeric powder.

Minse it using a mixer.

Heat oil in a pan and add onion, ginger, garlic, curry leaves and green chilly.

Add pepper, garam masala and salt in to it

Fry it for few minutes.

Mash the potatoes.

Add potato in to it and mix well.

Add chicken in to it and saute well.

Cook for a minute and turn off the flame.

Allow it for cool.

Make them in small balls and flat it for shallow fry.

Dip this balls in egg white and then roll in bread crumps.

Heat a tawa and add oil in to it.

Fry on both sides.

Serve with tomato ketchup.

Palaada




Ingredients

  • Maida ( 1 cup )
  • Egg ( 2 nos )
  • Sugar (1 table spoon)
  • Salt ( a pinch )
  • Milk ( 1/2 cup )
  • Water ( as required )
  • Cardamom.( 1 )
  • Ghee ( 2 table spoon )

Process

Mix all the ingredients together to form a batter.

Take a tawa and add ghee in to it.

Pour batter in to it.

Spread it like dosa.

Add some ghee.

Fold it twice.

Paalada is ready.

Easy Porotta



Ingredients

  • Maida ( 3 cups )
  • Egg ( 2 )
  • Milk ( 1/2 cup )
  • Soda powder ( 1/2 tea spoon )
  • Sugar ( a bit )
  • Salt (a required )
  • Oil/Dalda ( as required )
  • Water ( if needed )

Process

In a large bowl combine maida, milk, beaten eggs, sugar, salt and soda powder.

Add 2 tablespoon oil into it and knead it with your hands until it is smooth blend.

Use water if needed for mixing the blend.

Put the dough in a greased bowl.

Cover it with a wet cloth and let it rest for an hour.

Divide the dough in to 10 equal parts (like chappathi balls).

Roll out the ball as big and as thin as you can get it to be.

Sprinkle little flour as you go along.

Cut the roll in to 6 parts.

Using the six parts and form a spiral as shown below and put some oil on the top of it.



Continue working with other balls.

After that flatten each spiral with your hands by using oil.

Place the porotta in to a hot pan having oil in it and pour some oil on the top.

Turn it and again cook it.

Once it is done hit it nicely with your both hands so that we can see the layers in it.

Porotta is ready to serve.

French Fries



Ingredients

  • Potatoes ( 2 big, peeled )
  • Salt ( as required )
  • Vegetable oil ( as required )
  • Maida ( all purpose flour - 1/2 cup )
  • Water ( as needed )

Process

Slice potatoes in to stripes and place them in cold water for 15 minutes.

Mix maida and salt together to form a batter.

Place the potato stripes in hot water for 5 minutes so that it is half cooked.

Heat oil in a pan.

Dip potato stripes in to the batter,one at a time and place them in pan for frying.

Place one at time in to pan otherwise they will clump together.

Fry it until it become crispy

Remove it from fire and drain on paper towels.

Parippu Vada



Ingredients

  • Tur daal ( Parippu, 1 cup )
  • Dry red chilly ( 2 nos )
  • Green chilly ( 1 nos )
  • Asafoetida powder ( Kaya pody, 1 pinch )
  • Fennel seed ( 1/2 tea spoon )
  • Ginger (1 tea spoon chopped )
  • Curry leaves ( chopped )
  • Onion ( 2 sliced )
  • Oil  ( 2 cup )
  • Salt ( as required )
  • Water ( 1/4 cup )

Process

Soak the tur dhal in cold water for 2 hours.

Drain the water.

Grind the tur dhal to a paste adding water to facilitate grinding.

The paste should be stiff.

Grind them coarsely

Remove the batter in a vessel.

The dry red chillies should be grind together with soaked dhal.

Mix green chilly, ginger, curry leaves,sliced onion, fennel seeds, asafoetida powder and required salt in to paste.

Mix them together.

Make a round shape with your hands running through the edges.

Drop the vada into the oil.

Deep fry them in hot oil until they are golden brown.

Serve with coconut chutney or sambar.

Chicken Pan Cake



Ingredients

  • Maida ( 3 cups )
  • Egg ( 2 )
  • Milk ( 1 cup )
  • Water ( as required )
  • Salt ( as required )
  • Chicken ( 200 gm,boneless )
  • Pepper ( 1 tea spoon )
  • Vegetable oil ( 2 table spoon )
  • Ginger ( 1 tea spoon chopped )
  • Garlic ( 1 tea spoon chopped )
  • Onion ( 2 sliced )
  • Cabbage ( 2 table  spoon sliced )
  • Turmeric powder ( 1/2 tea spoon )
  • Chilly powder ( 1 tea spoon )
  • Garam masala ( 1 tea spoon )
  • Carrot ( 1 table spoon chopped )

Preparing Batter

Maida is mixed with beaten eggs.

Add milk to it.

Add enough water and salt in to it.

Mix well to form a batter ( like dosa mix ).

Keep it for  15 minutes.

Maida batter is ready.

Preparing Filling

Boil  chicken with pepper and salt.

Take a pan  and add oil in to it.

Add  garlic, ginger, onion, carrot and cabbage in to it

Add salt in to it and stir well.

Cook for 2 minutes.

Add turmeric powder, chilly powder and garam masala in to it.

Add boiled chicken in to it and mix well.

Cook for few minutes.

Filling is ready.
 
Process

Heat a non stick tawa and  add oil in to it.

Spread 1 table spoon of the batter on the whole of the pan (like dosa).

Grease all the corners and then cook it on the other side also.

Add filling in to it (inside) and roll it.

Tasty chicken pancake is ready.
