Chicken Cutlet



Ingredients

  • Chicken ( 200 gm )
  • Onion ( 2 nos, chopped )
  • Garlic ( 4 cloves, chopped )
  • Ginger ( 2 inch, chopped )
  • Chilly ( 1, chopped )
  • Bread crumps ( 1 cup )
  • Egg white ( 2 eggs )
  • Curry leaves
  • Potato ( 1 big boiled )
  • Turmeric powder ( 1 tea spoon )
  • Pepper powder ( 1 tea spoon )
  • Garam masala ( 1 tea spoon )
  • Salt ( as required )
  • Oil ( 1 cup )

Process

Boil chicken pieces with salt and turmeric powder.

Minse it using a mixer.

Heat oil in a pan and add onion, ginger, garlic, curry leaves and green chilly.

Add pepper, garam masala and salt in to it

Fry it for few minutes.

Mash the potatoes.

Add potato in to it and mix well.

Add chicken in to it and saute well.

Cook for a minute and turn off the flame.

Allow it for cool.

Make them in small balls and flat it for shallow fry.

Dip this balls in egg white and then roll in bread crumps.

Heat a tawa and add oil in to it.

Fry on both sides.

Serve with tomato ketchup.

Chicken Majboose

This dish is for my sweet sis in law "Shamina".



Ingredients

  • Basmati rice ( 1 cup )
  • Chicken ( 1/2 kg, cut in to big pieces )
  • Cinammon ( 4 nos )
  • Cloves ( 4 nos )
  • Kaskas ( 1 pinch )
  • Cardamom ( 2 nos )
  • Jathi pathri ( 1 no )
  • Pepper ( 5 nos )
  • Ginger Garlic Paste ( 1 tea spoon )
  • Pepper powder ( 1 tea spoon )
  • Turmeric powder ( 1 tea spoon )
  • Coriander powder ( 2 tea spoon )
  • Onion (  1 sliced )
  • Green Chilly ( 2 sliced )
  • Tomato puree ( 1/2 cup )
  • Tomato ( 1 )
  • Dried Lemon ( 1, soaked in water )
  • Soya Sauce ( 1/2 tea spoon )
  • Coriander Leaves
  • Tomato Sauce ( 1 tea spoon )
  • Chilly Sauce ( 1 tea spoon )
  • Carrot ( 1 chopped )
  • Green peas ( 50 gm )
  • Water ( 2 cup )
  • Olive Oil (  as required )
  • Cashew Nuts ( 8 nos )
  • Raisins ( 10 nos )
  • Salt ( as required )

Process

Mix chicken pieces with lemon juice.

Soak basmati rice in water for 30 minutes.

Fry cashew nuts and raisins.

Take a big pan and add olive oil in to it.

Add cinnamon, cloves, cardamom, jathipathri , kaskas and pepper in to it.

Add onion, ginger garlic paste and coriander leaves.

Fry it for a minute.

Add green chilly, tomato puree , tomato and salt.

Add chicken pieces, cumin powder,  turmeric powder, pepper powder and corinader powder.

Add dry lemon in to it.

Stir well and fry for a minute.

Add 2 cups of water to it.

Boil it until chicken pieces are cooked.

Take cooked chicken pieces from gravy and keep it aside.

Add soaked rice in to gravy.

Add carrot and green peas in to it.

Boil it for 5 minutes .

Add hot water ( If needed for cooking rice ).

Mix the boiled chicken pieces with soya sauce, tomato sauce and chilly sauce.

Grill chicken pieces with 1 tea spoon of olive oil in a fry pan.

Add grilled chicken pieces in to boiled rice and stop cooking.

Cover it for 15 minutes.

After 15 minutes add fried cashews and raisins.

Stir well and serve hot!!!

Crispy Chicken Fry



Ingredients

  • Chicken ( 300 gm )
  • Pepper (1 tea spoon )
  • Salt (as required )
  • Turmeric powder ( 1/2 tea spoon )
  • Corn flour ( 2 tea spoon )
  • Maida (1/2  tea spoon )
  •  Rice flour ( 1 tea spoon )
  • Gram flour ( 1 tea spoon )
  • Chilly powder ( 1 tea spoon )
  • Ginger garlic paste ( 1 tea spoon )
  • Ginger (1 tea spoon chopped )
  • Garlic (1 tea spoon )
  • Curry leaves 
  •  Green chilly
  • Lemon juice ( 2 )
  • Garam masala (1 tea spoon )
  • Fennel seeds (  1 tea spoon )

Process

Boil the  chicken with pepper salt and turmeric powder ( half boiled  ).

Make a paste  by mixing  maida , corn flour , rice flour , gram flour , salt ,chilly powder ,garam masala  , ginger garlic paste and lemon juice.

Dip  boiled chicken pieces in to it and mix well .

Make sure that all  part of chicken pieces is mixed with  paste.

Keep aside for about two hours, preferably refrigerate if possible .

Heat the oil for deep frying and fry the chicken pieces till they are cooked through and evenly browned.
 
Place the fried chicken pieces on absorbent tissue papers to absorb the excessive oil.

Use the same oil to fry the green chilies , ginger , garlic , fennel seeds and curry leaves and add to the fried chicken pieces.
 
Serve hot with tomato sauce.

Chicken Pan Cake



Ingredients

  • Maida ( 3 cups )
  • Egg ( 2 )
  • Milk ( 1 cup )
  • Water ( as required )
  • Salt ( as required )
  • Chicken ( 200 gm,boneless )
  • Pepper ( 1 tea spoon )
  • Vegetable oil ( 2 table spoon )
  • Ginger ( 1 tea spoon chopped )
  • Garlic ( 1 tea spoon chopped )
  • Onion ( 2 sliced )
  • Cabbage ( 2 table  spoon sliced )
  • Turmeric powder ( 1/2 tea spoon )
  • Chilly powder ( 1 tea spoon )
  • Garam masala ( 1 tea spoon )
  • Carrot ( 1 table spoon chopped )

Preparing Batter

Maida is mixed with beaten eggs.

Add milk to it.

Add enough water and salt in to it.

Mix well to form a batter ( like dosa mix ).

Keep it for  15 minutes.

Maida batter is ready.

Preparing Filling

Boil  chicken with pepper and salt.

Take a pan  and add oil in to it.

Add  garlic, ginger, onion, carrot and cabbage in to it

Add salt in to it and stir well.

Cook for 2 minutes.

Add turmeric powder, chilly powder and garam masala in to it.

Add boiled chicken in to it and mix well.

Cook for few minutes.

Filling is ready.
 
Process

Heat a non stick tawa and  add oil in to it.

Spread 1 table spoon of the batter on the whole of the pan (like dosa).

Grease all the corners and then cook it on the other side also.

Add filling in to it (inside) and roll it.

Tasty chicken pancake is ready.

Chicken Noodles Soup



Ingredients

  • Chicken ( breast boneless 100 gm )
  • Pepper Powder ( 1 table spoon )
  • Water
  • Corn Flour ( 1 table spoon )
  • Onion ( 1 finely chopped )
  • Carrot ( 1 finely chopped )
  • Coriander Leaves
  • Sunflower Oil ( 1 tea spoon )
  • Plain Noodles ( 50 gm )
  • Egg White ( 1 )

Process

Cook chicken with water, salt and pepper powder.

Separate stock and boiled chicken pieces.

Crush chicken pieces.

Heat oil in a pan.

Add carrot and onion. Stir and cook till onion becomes half brown.

Add crushed chicken pieces, a bit of pepper powder and salt.

Add chicken stock and noodles. Boil well.

Create a paste using corn flour and water. Add this paste to the boiling soup and stir well.

Add coriander leaves.

Turn off the flame and add egg white.

Soup is ready to serve.

Chicken Chukka - Delicious dish from Wayanad

I got this dish from one of my friend. After trying out it turned out one of my favorites.

Lets see what all ingredients is required for preparing this

Process 1

  • Chicken ( 1/2 Kg - small pieces )
  • Rice Flour ( 2 table spoon )
  • Corn Flour ( 3 table spoon )
  • Chilly Powder ( 1 table spoon )
  • Turmeric Powder ( 1/2 tea spoon )
  • Pepper Powder ( 1 tea spoon )
  • Lemon Juice ( 1 lemon)
  • Salt (as required)





Mix the above ingredients + chicken(add water if required) and marinate for half hour.



Deep fry in oil.



Keep it aside.

Process 2

  • Oil ( 2 table spoon )
  • Onion ( 3 medium, finely chopped )
  • Ginger ( 1 tea spoon finely chopped )
  • Garlic ( 1 tea spoon finely chopped )
  • Green Chilli ( 2 sliced)
  • Tomato ( 1 medium, sliced)
  • Turmeric Powder ( 1 tea spoon )
  • Coriander Powder ( 1 table spoon )
  • Pepper Powder ( 1 table spoon )
  • Garam Masala ( 1 tea spoon)
  • Hot Water ( 2 cup )
  • Coriander Leaf (as required)
  • Curry Leaf (as required)
  • Salt (as required)


Heat oil, add  ginger, garlic, green chilli,  salt, and onion.

Cook till onion color becomes brown.

Add tomato, turmeric powerder, coriander powder, pepper power, and garam masala.

Add fried chicken from process 1.

Now add hot water and mix well and cook till the gravy thicken.

Add coriander and curry leaves.

Yummy Chicken Chukka is ready to serve.



You can serve this with Ghee rice/Chappathi/Porotta/Appam etc.
